A dusting of hojicha powder completes this beautifully layered iced tea.

Cold Brew Hojicha with Cloud Foam
Makes: One 2-quart Iced Tea Maker pitcher, with individually prepared Cloud Foam servings
Ingredients
For the Cold Brew Hojicha
8 tablespoons loose-leaf hojicha tea
7¾ cups cold filtered water*
Ice, for serving
For Each Cloud Foam Serving**
3 tablespoons cold heavy cream
2 tablespoons cold milk
1 tablespoon simple syrup or preferred sweetener syrup
For Finishing
Hojicha powder, for dusting
1. Add Tea
Add 8 tablespoons of loose hojicha tea into the tea infuser with the extender attached. Twist the infuser with extender into the lid*
2. Add Water & Cold Brew
Fill the pitcher with 7¾ cups of cold water ***
Lower the infuser into the pitcher, seal the lid airtight, and steep in the refrigerator for 12 hours.
Once brewed, twist the lid open, lift the top handle of the lid with the infuser attached out of the tea, place it into the infuser holder, and twist to detach the infuser from the lid. Clean the infuser immediately.
3. Make The Cold Foam
For each serving, add 3 tablespoons of cold heavy cream, 2 tablespoons of cold milk, and 1 tablespoon of syrup to a tall glass or frothing cup.
Using a hand frother, froth until the mixture is smooth, creamy, and thickened while remaining pourable.
The Cloud Foam measurements make enough for one serving. Prepare additional batches as needed for each glass.
4. Assemble Each Glass
Fill a glass with ice.
Twist the pitcher lid open, aligning the arrow on the lid with the spout for a steady pour. Pour the cold brew hojicha over the ice.
Spoon or pour the Cloud Foam over the tea, then finish with a light dusting of hojicha powder.
Stir before sipping, if desired.
After serving, seal the pitcher lid airtight and store the remaining cold brew hojicha in the refrigerator. The pitcher can be stored upright or on its side.
Tips
Use cold cream and milk to help the Cloud Foam thicken as it is frothed. Froth the mixture until creamy and pourable rather than stiff like whipped cream. Prepare the Cloud Foam immediately before serving for the smoothest texture.
Use hojicha powder rather than loose-leaf tea as the finishing dust for a smooth, even garnish.
*Water level may vary depending on the size and volume of the hojicha leaves. Fuller tea leaves may take up more room in the pitcher, so adjust the water as needed.
**For a dairy-free Cloud Foam, substitute your preferred non-dairy cream and milk alternatives using the same measurements. A barista-style milk alternative may create a fuller texture.
